Lettuce Tacos
The fun is in assembling these with your favorite ingredients.
You will need one Cleaned Lettuce Leaf for each serving. Use Boston lettuce, romaine, or any type that can be rolled up like a tortilla.
The following ingredients might be used:
Cubed and cooked:
Pork
Chicken
Shrimp
Other ingredients to add might include:
Cashews
Dried Fruit like Craisins
Mandarin Oranges
Crispy Chinese Noodles
Bean Sprouts
Use your imagination! Place the protein in a lettuce leaf and add other favorite ingredients.Use dipping sauce either in the lettuce or dip!
Apricot Sauce
1/3 cup Apricot Preserves
1 teaspoon soy sauce
1/2 teaspoon horseradish
1 teaspoon sesame oil (optional, may use canola or vegetable oil)
1/4 cup white wine or white balsamic vinegar
Blend ingredients until emulsified. Thin with warm water if necessary. Serve chilled.
Peanut Sauce
1/4 cup peanut butter
1/3 cup water
2 tbsp soy sauce
2 tbsp lime juice
Pinch of red pepper flakes (optional)
1 Tsbp. white wine vinegar or white balsamic vinegar
Combine ingredients in a saucepan over medium heat. Stir in all ingredients. Blend until smooth. Add a little water if too thick.
