Fr. Paul’s Roasted Chicken Legs and Thighs
1 pkg. chicken legs
1 pkg. chicken thighs
Salt and pepper
Dried herbs (dill, thyme, lemon thyme, mint, sage)
Rinse chicken and pat dry. Sprinkle with salt and pepper. Place in a single layer into a baking dish. Sprinkle on dried herbs. Place in a 450 degree oven for 15 minutes. Remove. Drain off fat. Cover. Lower the oven to 350 degrees and bake 30 minutes. Uncover. Bake another 15 minutes uncovered or until the internal temperature reaches 165 degrees.
Before serving, sprinkle with white balsamic vinegar and olive oil.
Kathy Goller’s Antipasto Squares
2 packages (8) Pillsbury crescent rolls
¼ lb. each: salami, Swiss cheese, ham, provolone cheese, pepperoni
Grated Parmesan cheese
1 jar (12 oz.) sweet roasted red peppers
2 eggs, beaten
Spray a 9x13 pan; spread 1 package of crescent rolls and stretch to fit the bottom of pan.
Layer salami, Swiss cheese, ham, provolone cheese and pepperoni, put peppers on top and cover with the second package of crescent rolls on top.
Beat eggs and pour over dough and sprinkle with parmesan cheese.
Bake at 350 degrees for 25 minutes or until lightly brown.
Cut in squares when cool. Serves 15-20
Fr. Paul’s Naan Bread Pizzas
Different types of Naan bread or flat breads
Cherry tomatoes, halved
1 onion , caramelized
1 green onion, chopped
Roasted red peppers, from a jar
Assorted meats and cheeses (ham, pepperoni, Swiss, mozzarella)
Place a cast iron skillet over med heat, and start building your pizza on the Naan bread. Once the pizza is the way you like it, transfer the warm skillet under the broiler for about 5 – 7 minutes until the cheese is melted.
