Len Rizzo's Easy Ice Cream Cake Sandwich
1 pkg. of ice cream sandwiches (12 count)
32 oz. tub of Cool Whip
1 large plastic cutting board
 
Unwrap all 12 ice cream sandwiches. Lay four side by side on top of the cutting board. Cover with Cool Whip. Repeat this step two more times.
 
Frost the entire cake with Cool Whip. Sprinkle with rainbow jimmies (or nuts). Place cake, (cutting board and all) in the freezer at least 24 hours.
 
Remove from freezer 10 minutes before cutting. Serve and enjoy!
 

Fr. Paul’s Popcorn Chicken Nuggets
4 boneless, skinless chicken tenders or chicken breasts, pounded thin
1 cup flour in a bowl, set aside
1 cup of Panko breadcrumbs
2 eggs, beaten lightly
1 lemon
 
Cut the chicken tenders into bit size chunks. Squeeze lemon juice over chicken. Dredge chicken in flour, then egg wash and then coat with breadcrumbs.
 
Place pieces in a deep fryer with oil at 450*. Fry about 5 - 8 minutes or until chicken is no longer pink. Drain on paper towel. Serve with Dipping Sauce
 
Asian Dipping Sauce
1 Tbsp. Apricot Jam
1 tsp. white balsamic vinegar
1 tsp. prepared Asian dipping sauce
Stir well.
 
Horseradish Dipping Sauce
1 Tbsp. beet horseradish
1 Tbsp. Ketchup
Pinch dry basil
Pinch garlic powder
1 tsp. white balsamic vinegar
 
Len’s Personal Pan Pizza
A pkg. of prepared pizza shells
Tomato Sauce
Mozzarella cheese
Any pizza toppings you like
 
Top the prepared pizza shell with sauce and add your favorite toppings. Bake in a 350* oven for 20 minutes.
