Fr. Paul’s Meatloaf
2 lbs. ground beef (chuck)
1 lb. ground pork (bulk Italian sausage)
1 small onion, diced
½ cup carrots, diced
½ cup celery, diced
1 cup beef or chicken stock
1 tsp. smoked paprika
1 tsp. salt
1 tsp. pepper
2 eggs
¼ - ½ cup breadcrumbs
¼ cup ketchup
¼ cup parsley, chopped
1 Chipotle pepper, (in the can – diced)

In a small saucepan, add stock, onions, carrots, and celery. Cook about 10-12 minutes until vegetables are soft. Drain and set aside. In a large mixing bowl add beef and pork. Add all other items and mix well. Loaf and place in a large baking dish. Preheat oven to 350° and bake for 60 – 90 minutes, or until meat is no longer pink.



Injera and Kisra Made by Fr. Ron
2 cups sorghum flour
1 1/2 cups water, plus 1 cup, or as needed
1 cup all-purpose flour
Mix the sorghum flour with 1 1/2 cups water and let sit overnight
The next day stir in the all-purpose flour and last cup of water, to form a thin batter.

To make Injera

Use about a cup of batter and pour out onto a skillet. Move the skillet around quickly so the batter spreads into a larger circle. Cover and cook about 1 minute or until lightly brown. Remove to a platter and roll up like a jelly roll.

To make Kisra

Use about a cup of batter and pour out onto a skillet in a crescent shape. Use a scraper to Move the skillet around quickly so the batter spreads into a larger circle. Cover and cook about 1 minute or until lightly brown. Remove to a platter and roll up like a jelly roll.


Nyagua Made by Grace
1 bag of spinach, chopped and rinsed
1 small onion, diced
2 chicken bouillon cubes
2 cups of water
Beef, cut into long strips
1 cup peanut butter

Cut beef into long strips and roast in a 350° oven for 30 minutes. Remove and let cool. Once cool, chop into pieces about 1 inch thick and set aside. Rinse and chop the spinach. Place spinach into boiling water and cook until tender, drain and set aside. In a small saucepan add about 2 cups of water, the onion, bouillon cubes and diced meat. Boil about 15 minutes. Then add the cooked spinach to the pan with the meat and add the peanut butter.
