Strawberry - Rhubarb Pie

2 cups Strawberries
2 cups Rhubarb
1 Tbs. Tapioca
1 cup Sugar
1 two shell pie crush

Mix strawberries, rhubarb, sugar and tapioca in a medium bowl and let sit for five minutes. Lightly beat one egg. Brush beaten egg onto the bottom crust of the pie shell. Fill with fruit. Top pie with second crust. Brush beaten egg on top. Place slits in the top crust. Sprinkle with sugar. Bake for 1 hour at 375*.

NOTE: For added flavor, after brushing the bottom crust with the beaten egg, sprinkle with pumpkin pie.

Stuffed Peppers

5 large green peppers, halved and cleaned

In a large bowl combine
1/2 lb. ground round
1/2 lb. ground turkey
1 cup long grain rice
1/2 onion, diced
Salt and pepper to taste
Mix well.

In a blender combine
1 clove of garlic
1/2 onion
2 cans whole tomatoes (or 5 fresh tomatoes)
1 can tomato sauce
Cover and blend about 60 seconds.

Add about 1/3 of this sauce mix to the meat and rice and again, mix well.

Pour about 1/3 of the sauce mix into a casserole dish. Stuff the halved peppers with meat mix and place on top of the sauce. After all peppers are stuffed and in the baking dish, pour the remaining sauce on top of the peppers. Cover with foil. Bake for 1 hour at 350*
