Shrimp Salad

Lenten Shrimp Salad

1 pkg. any flavor wild rice - cooked according to the package directions
6 eggs, hard-boiled
1 3/4 c. celery, chopped
1 1/2 c. shrimp, peeled (Sr. Barbara likes to use the small - bite size fresh shrimp)
1/2 c. onions, finely chopped 1/2 c. dill or sweet pickles, finely chopped
1/2 c. sour cream
1/4 c. mayonnaise (both the sour cream and mayo can be fat free - this will not affect the flavor of the salad - Sr. Barbara likes to save calories where she can so she can have a bigger piece of dessert!)
1 tsp. lemon pepper
1/4 tsp. red pepper flakes (if you like things spicy, double this amount)
salt and pepper to taste (if you use a flavored rice, you shouldn't need too much salt)

When the rice is cool, add all other ingredients. Refrigerate before serving!
