"Our Daily Bread" airs every second Saturday at noon on WKBW Ch. 7
Fr. Paul’s Fish in Foil
1 cup bow tie pasta, cooked
1 piece Mahi Mahi (Or your favorite type of fish)
2 tsp. olive oil
1 tomato, sliced
3 Tbsp. tomato sauce
4 – 5 thinly sliced zucchini pieces
½ green onion, sliced
Juice of ½ lemon or 1 Tsp. lemon juice
1 tsp. white balsamic vinegar
Salt and pepper to taste
1 sheet of aluminum foil
Lay the sheet of aluminum foil on a flat surface and spread olive oil on top. Place the bow tie pasta in a pile on the foil. Top with tomatoes and tomato sauce. Place fish over the sauce. Top the fish with slices of zucchini and green onions. Sprinkle with salt, pepper and vinegar. Fold up the sides of the foil to create a sealed package. Place in a 350* oven for 10 – 15 minutes. Unwrap and serve in the foil pouch!
***Remember you cook fish 10 minutes per inch of fish***
The Boy Scouts – Lemon Lime Soda Apple Dumplings
2 large Granny Smith Apples
1 12-ounce can of lemon-lime soda
2 8 ounce cans of crescent rolls
1 stick butter
1 cup sugar
1 Tbsp. cinnamon
At camp this would be cooked in a Dutch oven, but for a conventional oven use a 9 x 13 inch pan.
Melt the butter and pour it in the bottom of the pan. In a small bowl mix the cinnamon and sugar. Peel and slice the apples. Remove the crescent rolls from the can. Wrap a crescent roll around each apple and place it in the buttered pan. Once all the apples are wrapped, sprinkle them with the cinnamon and sugar mix. Add the lemon-lime soda to the pan. Cover with foil and bake in a pre-heated 350* oven for 40 minutes. Remove the foil during the last 5 minutes of baking.
The Girl Scouts – Tagalong Milkshakes
½ box of Tagalong Girl Scout Cookies
6 cups of vanilla ice cream
1 cup of milk
1 can of whipped topping
Mix cookies, ice cream and milk in a blender. Blend until desired thickness is achieved. Serve in a tall milkshake glass and top with whipped cream. Garnish with crumbled cookies!
