Ruby Ambrosia

Carol Crolle’s Ruby Ambrosia

1 can cherry pie filling
1 can sweetened condensed milk
1 can crushed pineapple, do not drained
1 tub Cool Whip
½ cup chopped pecans
Mix everything together and chill at least one hour.

Hint: Try using raspberry pie filling and walnuts.

Carol’s Snicker Salad

1 box French vanilla instant pie pudding
1 cup milk
Mix together until set. Then add:
1 tub Cool Whip
1 bag on snicker’s fun sized candy bars, chopped
6 granny smith apples, chopped
Mix well and chill.

Ron’s Pine Nut and Couscous Crusted Salmon

Butter a casserole dish.
Sauté pine nuts in olive oil with 2 cloves chopped garlic.
In a bowl add 2 cups of couscous. To that add: ½ cup copped green olives; ½ cup chopped parsley and the nuts and garlic. Mix well.
Place salmon steaks in the buttered casserole dish. Season with salt and pepper. Cover the salmon with the couscous mix. Add about ½ cup white wine over top. Squeeze the juice of one lemon on top. Bake at 350* for 30 minutes.
