Leolia's Sweet Potato Pie

7 sweet potatoes
1 stick butter, melted
Juice of one lemon
1 Tbsp. baking powder
2 eggs
2 tsp. vanilla
Sugar to taste - (2 1/2 cups)
Dash of salt
Half a can of PET evaporated milk
Nutmeg to taste

Cook sweet potatoes (bake potatoes in the oven or microwave. You can peel, chop and boil like a white potato- but it's much easier to bake them.)

In a large bowl, mash the potatoes by hand and then use an electric mixer to smooth out lumps and to remove some of the potatoes' strings. Add the remaining ingredients and mix well with a wooden spoon.

Spoon mixture into a 9 inch pie shell. Bake at 350* for 1 hour or until a toothpick inserted in the center, comes out clean.

This recipe should make 4 -5 pies.


Sr. Geraldine's My Salad

In a large salad bowl combine a variety of clean lettuce greens. Mix in a half a head of shredded red along with half a head of shredded white cabbage. Add at least 1 cup of your favorite nuts, raisins, dried cranberries and 1 can of drained mandarin oranges. Then add broccoli heads or shredded broccoli. Serve with Citrus Splash dressing.
