A Trinity of Chicken Recipes

Fr. Paul’s French Style Chicken
4 chicken thighs
1 cup onions, diced
½ cup celery, diced
½ cup carrots, diced
2 strips of fatty bacon, chopped
Salt and pepper to taste
2 Tbsp. Tarragon vinegar
2 Tbsp. Dijon mustard
1 tsp. Cognac
¼ cup dry wine (Fr. Paul uses Vermouth)
2 Tbsp. butter
¼ cup heavy cream
Handful of mushrooms, roughly chopped
Canola Oil

In a Dutch oven, heat 2 Tbsp. of oil and fatty bacon. Heat bacon about 5 minutes until lightly cooked. Add chicken and brown on both sides, remove and set aside. Add another 2 Tbsp. of oil in to the Dutch oven, and then add the onions, celery and carrots. Cook about 8 – 10 minutes. Add tarragon vinegar, mustard, cognac then mix well. Place browned chicken on top of vegetables. Add wine, butter, cream and mushrooms then cover the pot. Place in a 350* oven for 30- 40 minutes. Check about half way through cooking process to make sure that it is not drying out. If you see it is dry, add water, or chicken stock.

 
Fr. Paul’s Cajun Style Chicken
4 chicken thighs
1 cup green peppers, diced
1 cup celery, diced
1 cup onions, diced
1 can diced tomatoes, do not drain
3 Tbsp. flour
¼ cup dry white wine (Fr. Paul uses Vermouth)
Salt and pepper to taste
1/8 tsp. cayenne pepper
2 tsp. oregano
1 Tbsp. Dijon mustard
1 tsp. File powder
2 tsp. garlic, chopped
Canola oil

In a Dutch oven, heat 2 Tbsp. of oil. Add chicken and brown on both sides, remove and set aside. Add another 2 Tbsp. of oil in to the Dutch oven, and then add the peppers, onions and celery. Cook about 8 – 10 minutes. Add flour and about 3 tsp. of oil to the pot, and mix well. Cook about 2 minutes longer. Add wine, salt and pepper, cayenne pepper, oregano, mustard, File powder and garlic, then mix well. Place browned chicken on top of vegetables and cover the pot. Place in a 350* oven for 30- 40 minutes. Check about half way through cooking process to make sure that it is not drying out. If you see it is dry, add water, or chicken stock.

 

 
Fr. Paul’s Spanish Style Chicken
4 chicken thighs
1 cup garlic, chopped
½ cup green peppers, chopped
½ cup onions, chopped
2 links of Chorizo sausage, sliced
1 can diced tomatoes, do not drain
2 threads of Saffron
1 Tbsp. smoked paprika
Salt and pepper to taste
Sherry wine vinegar or white wine vinegar
Canola oil

In a Dutch oven, heat 2 Tbsp. of oil. Add chicken and brown on both sides, remove and set aside. Add another 2 Tbsp. of oil in to the Dutch oven, and then add the garlic, peppers, and onions. Cook about 8 – 10 minutes. Add the rest of the ingredients and then mix well. Place browned chicken on top of vegetables and cover the pot. Place in a 350* oven for 30- 40 minutes. Check about half way through cooking process to make sure that it is not drying out. If you see it is dry, add water, or chicken stock.
