Heaven – Purgatory - Hell

Fr. Paul’s Sauce (Used in the Purgatory and Hell Recipe)
1 can of 90 oz San Marzano Tomato in juice, crushed
3 tsp. Olive oil
1 small onion, chopped
3 -4 Tbsp. garlic, chopped
2 tsp. capers, soaked in ¼ cup white wine
1 tsp. dried basil
1 tsp. red pepper flakes

In a large sauce pan over medium heat, add olive oil. When hot add onions, garlic, capers and cook about 2 minutes. Do not burn garlic. Add tomatoes, red pepper flakes and basil. Stir well and simmer 30 minutes.

Heaven - Fr. Paul’s Cheese and Pepper over Angel Hair Pasta
1 pkg. fresh Angel Hair pasta
1 cup freshly grated Pecorino Romano Cheese
2 tsp. Olive oil
2 Tbsp. Freshly ground black pepper
In a large pasta pot boil and salt water. Cook pasta according to directions on the bag. Drain the pasta (reserving the pasta water) into a heated skillet. Add olive oil, and stir. Add the cheese and about 1 – ½ cups pasta water. Stir well and add round pepper. Serve immediately.

Purgatory - Fr. Paul’s Eggs in Purgatory
Using 2 cups of the Sauce Recipe above
3 – 4 eggs
½ cup shredded Parmesan cheese – or a mix of whatever cheese you like
3-4 leaves of fresh basil, chopped
In a skillet add about 2 cups of sauce and heat. When the sauce starts to bubble, break the eggs and carefully place them on top of the sauce (like you are poaching the eggs). Top with the cheese and basil. Cover and cook until the whites of the eggs are set. Serve immediately over toast.

Hell - Fr. Paul’s Spicy Shrimp of the Devil
Using the Sauce Recipe above
1lb. pasta
1 ½ lbs. shrimp, peeled and deveined
1 cup Italian breadcrumbs, toasted
5 tbsp. olive oil
3-4 tsp. garlic, chopped
1 tsp. ground black pepper
1 tsp. pepper flakes
2 tsp. freshly chopped parsley

Cook pasta according to the directions on the bag. In a sauté pan, heat the oil. Add the garlic, ground pepper and pepper flakes. Stir well cook about 1 min. Do not burn the garlic. Add the shrimp and cook until pink and done. Drain but, do not rinse pasta add to the skillet. Add about 2 cups of sauce to the skillet. In a small skillet toast the breadcrumbs. Sprinkle on top of the pasta. Top with parsley.
