Espinacas con Garbanzo - Spinach with Garbanzo beans
1 bunch of fresh spinach, washed, dried and chopped (8 oz.)
1-3 cloves of garlic, peeled and finely chopped
1-2 slices of bread good bread (if using baguette, use two slices)
A pinch of salt, 1 tsp each: paprika, cinnamon, cumin
Cayenne pepper to taste
4 oz. sherry
2 oz. white wine vinegar
1 8oz. can garbanzo beans, drained and rinsed
2 tbs. olive oil
Heat 1 teaspoon of olive oil in a skillet and fry the garlic until toasty. Fry the bread in the same oil until browned. Remove Bread and Garlic.
Mash the garlic and bread together; add the sherry and vinegar and mash to a paste. In the same pan cook down the spinach in the remaining teaspoon of oil.. Add the garbanzo beans. Sauté for about 5 minutes. Add spices (except salt). Add a little water if it gets dry. Salt to taste. Serve as an appetizer or side dish. Good hot or at room temperature.
