Fr. Paul’s Grilled Peaches
2 peaches, quartered
8 slices of pancetta
1 8oz. container of Mascarpone cheese
Salt & pepper to taste
Wash and quarter peaches removing the pit from each. Wrap a slice of pancetta around each peach quarter. Grill over medium heat until the pancetta is crispy (about 4 minutes per side.)
Remove peaches from heat and serve over a small bed of lettuce. (Place two peach quarters on each plate). Top each peach with a dollop of Mascarpone cheese. Sprinkle with salt and pepper. Drizzle a small amount of olive oil and balsamic vinegar over the top of the peaches.
