Feast of Seven Fishes

Fr. Paul Seil Celebrates the Feast of the Seven Fishes
2 pieces of frozen cod fish
Handful of arugula
Handful shredded carrots
1 Tbsp. capers
1 Tbsp. olive salad
2 thin slices of tomato
1 thin slice of orange
1/4 cup of Italian Proseco  or any White Wine
Parchment paper
 
In the parchment paper layer the arugula, fish, carrots, capers, olive salad. Top with tomato and orange slices. Gather up the parchment paper, as if you were going to wrap up the fish. Add the wine. Gather and seal the parchment paper. Place the fish packet in a baking dish and place in a pre-heated 350* oven. Cook 10 minutes per inch of fish. Serve right from the parchment paper.
