Fr. Paul’s Fried Ricotta Appetizer
½ cup flour
½ cup breadcrumbs
1 cup of Ricotta cheese
6 – 8 jumbo shrimp, cleaned
2 tsp. butter
Take about 1 or 2 Tbsp. of Ricotta and roll it into a ball then gently pat into form a patty. Place on a plate and refrigerate at least 1 hr. Place the egg into a bowl and beat well. Place the flour into a bowl and set aside. Place the breadcrumbs into a bowl and set aside. Dip cold cheese patties into the flour, then the egg then the breadcrumbs. Shake off any excess.
Heat oil in a frying pan and fry cold cheese until brown on both sides. Remove from oil with a slotted spoon and drain on paper towel.
Fry the shrimp in a little oil and butter until pink. Place the cheese on a plate. Top with shrimp and drizzle sauce over the top.
2 tsp. apricot or peach jam
1/8 tsp. black pepper
A pinch of salt
A pinch of crushed red pepper flakes
¼ cup or less of White Balsamic Vinegar
Tyler’s No Bake Cheese Cake
1 9 inch graham cracker crust
1 pkg. vanilla instant pudding (Do Not use Fat free- sugar free)
1 pkg. Dream Whip
2 8 oz. boxes cream cheese
2 ½ cups cold milk (do not use skim or fat free)
Slowly beat cream cheese and ½ cup of milk. Add other ingredients and beat for 10-12 minutes. Pour into crust and sprinkle with a few crushed graham crackers. Chill overnight.
Tyler’s Three Cheese Pasta
*NOTE FROM TYLER* I’m not sure of the exact measurements for this recipe. I eyeball pretty much every ingredient but I estimated about how much I use so I could share this recipe.
1 box bowtie pasta
3 Tbsp. Italian seasoning
1 Tbsp. Oregano
1 Tbsp. Rosemary
1 Tbsp. Basil
7 Tbsp. olive oil
½ cup grated parmesan cheese
1 cup crumbled feta cheese
¼ cup shredded mozzarella cheese
1 small can sliced black olives
2 grilled chicken breasts cooked and cut into small pieces (optional)
½ cup mushrooms (optional)
Red or green peppers, diced (optional)
Cook noodles according to package. Drain, but do not rinse. Add the olive oil and toss the pasta. Add everything else and toss well.
