Jennifer's Eggs Delicious
3 oz. cream cheese
1/2 c milk
6 medium eggs
1 c diced pre-cooked ham
1 lg. ripe tomato, cut in wedges
1/4 tsp. salt
1/8 tsp. pepper
1 tbs. butter

In a large mixing bowl, beat cream cheese until fluffy. Slowly beat in milk, until well blended and then beat in eggs. Stir in ham, tomato, salt and pepper. Place butter in 1 1/2 qt. microwave safe casserole dish. Heat on full for 30 seconds or until butter is melted. Add the egg mixture to the casserole dish. Cook on full power for 8 to 10 minutes or until eggs are set, yet moist. Stir 2 or 3 time during cooking.

Kathy & Tara's Egg Sandwich

16 or 18 pieces of white bread
1/2 lb. deli ham
1 c grated mozzarella or cheddar cheese
6 eggs
1/2 tsp. salt
1/2 tsp. pepper
1/2 tsp. dried mustard
1/4 c green onions
2 tsp. Worcester sauce
2 c milk
Splash of tobasco sauce
1/4 c butter
1 1/2 to 2 c Corn Flakes (cereal)

In a 9 x 13 butter pan, layer 8 or 9 pieces of white bread; add the ham and cheese; add another layer of bread. Beat together the remaining ingredients and pour over the bread. Refrigerate overnight. The next day, melt 1/4 cup butter and pour over the top of the casserole. Cover with crushed corn flakes. Bake at 350* for 1 hour. Cut in square pieces.

Doris' Eggs in Bacon Baskets
8 bacon strips
8 eggs
2 c half and half
paprika

Fry bacon until limp not crisp. Immediately wrap each warm bacon strip around the sides of a muffin tin to form a circle. Break an egg into each muffin tin. Top each egg with 2 to 3 tbs. of half and half. Sprinkle with paprika. Bake at 350* for 12 minutes for a medium - firm egg. Gently remove eggs to serve.

HINT: For a zesty accent, top each egg with minced green onions, jalapeno peppers or grated cheese before baking.
