Omelet for One
3 eggs
¼ cup water
1 tomato, chopped
3 slices pancetta, chopped
2 tsp. feta cheese
A pinch of basil, salt, pepper
 
In a 8-inch nonstick skillet, add 2 tablespoons butter. In a bowl, beat eggs, water, tomato, pancetta, cheese, basil, salt and pepper. Pour into the skillet, cook over medium heat. As eggs set, lift edges, letting uncooked portion flow underneath. When eggs are set, turn out onto a plate.
 
 
Panini – BBQ Pork Sandwich
Crusty roll
Leftover pork tenderloin, chopped
2 – 3 tsp. BBQ sauce
A slice of your favorite cheese
A dash of hot sauce
1 tsp. pepper spread
Make the sandwich and then place in a Panini maker to crisp and toast up.
 
 
Pizza Margarita Sandwich
Crusty roll
2 slices of tomato
2 slices mozzarella
Drizzle of olive oil
A few leaves of basil
Make the sandwich and then place in a Panini maker to crisp and toast up.
 
 
Open Face Tuna Salad
1 can tuna in oil
1 tsp. sour cream
2 Tbsp. white balsamic vinegar
A pinch of tarragon
 
Mix well in a small bowl and serve with toast points.
 
 
Ceil Bork’s Meatless Split Pea Soup
4 carrots, peeled and chopped
4 potatoes, peeled and chopped
4 stalks celery, chopped
8 cups water
1 bag green split peas
4 chicken bouillon cubes
1 tsp. each of pepper, Worcestershire sauce, granulated garlic and liquid smoke
Stir well. Simmer over low heat for 2 hours until the peas are dissolved.
