Blue Cheese Grapes - Collard Greens - Herbed Cream Cheese Omelet - Gingerbread Pancakes

Blue Cheese Grapes
5 oz. almonds
8 oz. creamed cheese, softened
3 oz. Blue cheese
¼ cup milk
1/4 lbs. seedless red grapes
1/4 lb. seedless green grapes

In a dry skillet – dry roast the nuts. In a food processor coarsely chop toasted almonds. Transfer to a med bowl. In a med bowl whip together cream cheese and Roquefort cheese and heavy cream. Gently fold the grapes into the mix to coat. Roll each grape in the almonds and place on wax paper and chill in the refrigerator until you serve.

Collard Greens
2 bags of greens
3 strips of salt pork
1 small onion, chopped
1 pkg. smoked turkey wings
salt to taste
2 cups of water

Rinse greens. In a large pot fry up the salt pork and onions until they are translucent. Add the greens, water, and turkey, salt. Boil at least 45 mins.

Herbed Cream Cheese Omelet
4 oz. cream cheese, softened
1/2 cup fresh cilantro leaves
Salt and pepper to taste
3 Tbsp. butter
8 eggs

Mix cream cheese and cilantro in a bowl, adding the salt and pepper to taste. Heat one-quarter of the butter in a well-seasoned omelet pan or an 8-inch non-stick pan over med-high heat. When the butter is hot and bubbling, swirl it around the pan. Just before the butter begins to brown, beat 2 of the eggs and pour into pan. Lower the heat. After 10 seconds, the omelet will coagulate. Push the omelet to one side of the pan with a spoon, and let the raw egg run over the cleared skillet. Repeat one more time., then take the skillet off the heat. Dab one quarter of the herbed cream cheese along the middle of the omelet from one side to the other. Season the omelet with additional salt and pepper to taste. If it has not completely set, place the pan over medium heat for a half minute longer. When the omelet is set. Slide it from the pan onto a plate so that the omelet rolls up and the herbed cream cheese runs along the length of the roll. Serve it right away. Make 3 more omelets the same way, making sure the pan and butter get good and hot before adding the beaten eggs. Serve each one as soon as it is cooked!

Gingerbread Pancakes
To your favorite pancake mix add the following
1 tsp. cinnamon
1 tsp. cloves
1 tsp. ginger
6 Tbsp. ground hazelnuts
Mix according to package.

Heat a lightly oiled griddle or frying pan over med heat. Pour batter onto griddle, when the batter starts to bubble, flip and cook on the other side.
