Fr. Paul’s Baptism Salad
2 cups Arugula
1 cup Belgian endive
1 onion, chopped
2 Tbsp. butter
4 – 5 strawberries, sliced
½ cup honeydew melon, diced
1/3 cup feta cheese
Wash greens and spin dry in a salad spinner, set aside. To a small frying pan add butter and chopped onions. Cook until onions are caramelized. Place onions onto a large platter. Top with salad greens, fruit, and feta cheese. Drizzle with dressing.
 
*Note* This salad is designed to use up any greens, fruit, vegetables or nuts you may have in the refrigerator. The recipe above is just a guide.
 
Fr. Paul’s Baptism Salad Dressing
1/3 cup oil
1 tsp. Dijon mustard
Pinch of pepper & sea salt
1 tsp. dried basil
½ cup white balsamic vinegar
Mix well. Drizzle over salad and serve immediately.
 
Peach Sorbet
3 – 4 cups peaches, pitted, peeled and diced
2 cups sugar
1/3 cup lemon juice
2/3 cup orange juice
Add peaches to a food processor and puree. Set aside. To a small sauce pan add sugar, lemon juice and orange juice. Cook over medium heat until sugar is dissolved, stirring constantly. Once the sugar is dissolved, cool about 10 minutes then add the peach puree. Mix well. Place in the refrigerator to cool completely. Once the peach liquid is cold, pour into a commercial ice cream maker and run at leas 30 minutes until the mixture resembles soft ice cream. Remove frozen sorbet from ice cream maker and place in a plastic container and keep in the freezer.
 
 
Fr. Patrick O’Keefe’s Crisco Frosting
1 part Crisco
3 parts powdered sugar
1 tsp. vanilla extract
About ½ cup milk – you my need more depending on the quantity and thickness you desire.
Add all ingredients to a mixing bowl and mix well at high speed until thick and spreadable.
