Baked Rice

Baked Rice

1 cup rice
8 or 9 eggs
1/3 cup parsley, chopped
1/4 cup chives, chopped
1/3 cup roman cheese
8 oz. mozzarella, cubed
20-24 small meatballs
2 hard-boiled eggs, sliced
Bread crumbs

Cook rice and cool. While rice is cooking, break the eggs into a large bowl. Whisk or use a hand mister to beat. Add grated cheese, parsley, chives, salt, pepper and 1 cup of sauce. Stir in cooked and cooled rice.

Lightly oil an 8x10 pan and sprinkle bread crumbs on the bottom. Add 1/2 of the rice mixture. Add the little meatballs (your favorite recipe) and the sliced hard boiled eggs and the mozzarella. Top with remaining rice. Smooth out the top and sprinkle a few bread crumbs on top. Sprinkle a few drops of olive oil on top also. Bake at 350* for 25 minutes. Take out and cover the top with sauce. Bake another 25 minutes. Serve with sauce on the side.

Fruit Salad

1 20 oz can pineapple tidbits, drained. Reserve 1/4 cup of the juice
2 cups mini marshmallows
1 lb. seedless grapes, cut in half (use half red and half green)
1/4 cup chopped nuts
1 egg, slightly beaten
1/8 tsp. dry mustard
1/2 pint whipping cream, whipped

Add 1/4 cup of pineapple juice to the egg with the dry mustard and cook until thick. When cool, fold in whipped cream. Combine marshmallows, grapes, pineapple, nuts. Fold in cream mixture and chill.
