Fr. Paul’s Roasted Red Tomatoes
12 plum tomatoes
Slice tomatoes lengthwise into quarters. Lay skin side down on a non-stick cookie sheet. (If you do not have a non-stick cookie sheet, use a little olive oil on the bottom so the tomatoes do not stick)
Sprinkle tomatoes with garden herbs like oregano, and basil.
Then sprinkle tomatoes with balsamic vinegar.
Bake in a preheated 250* oven for 1 ½ - 2 hours.
Remove from cookie sheet. Place in a bowl and dress with olive oil, salt to taste and freshly chopped garden herbs.
Serve on bread, with cheese or use on a sandwich.
