Fr. Paul’s Layered Salad
1 cup iceberg lettuce, shredded
½ cup carrots, shredded
2 Tsp. lemon juice
2 cooked potatoes, sliced with the skin still on
1 cup chickpeas
1 cup grape tomatoes
½ cup black olives, pitted
2 hard boiled eggs, sliced
¼ of a red onion, sliced thin
½ cup red leafy lettuce
½ cup green beans, cooked
¼ cup peas, cooked
1 can Tuna Fish packed in olive oil
In a trifle dish layer the salad ingredients as listed.
Fr. Paul’s Salad Dressing
4 Tbsp. mayonnaise
1 Tbsp. Dijon mustard
3 Tbsp. capers
1 Tbsp. honey
1 Tbsp. lemon juice
Salt and pepper to taste
2 – 3 Tbsp. fresh tarragon, chopped
½ cup white balsamic vinegar
2 – 3 Tbsp. olive oil
Add all ingredients to a small bowl and whisk well. Serve dressing on the side.
Sharon’s Golabki Soup
5 cans tomato soup
5 cans water
½ cup onions, chopped
5 Tbsp. vinegar
5 Tbsp. brown sugar
1 lb. lean ground beef
2 cups rice, cooked
4 cups coleslaw
In a skillet brown ground beef until no longer pink; drain and set aside. To a large soup pot add the tomato soup, water, onions, vinegar, brown sugar, coleslaw, cooked rice and cooked beef. Simmer over low heat about 30 - 45 minutes.
Sharon’s Fruit Pizza Pie
1 pkg. sugar cookie mix
1 stick butter, melted
1 egg
Add above ingredients to a bowl and mix well to form a ball. Press into a lightly greased round pizza pie pan. Bake at 375* for 15 minutes. Cool.
8 oz. cream cheese
¼ cup powdered sugar
8 oz. Cool Whip
Add above ingredients to a bowl and mix well. Spread onto cookie crust round.
1 container strawberries, sliced
3 kiwi, peeled and sliced
1 cup blueberries
1 can mandarin orange slices, drained
Arrange fruit on filling and serve.
