Advent 2012 Cooking for A Crowd

Fr. Paul’s BBQ Pork Loin
½ pork loin
½ cup salt
¼ cup pepper
BBQ Sauce – Fr. Paul likes Sweet Baby Rays
Pink Grapefruit juice

Lay the pork loin on a cutting board. Rub with salt and pepper. Place in a baking dish and cover. Place in a 450* - 500* oven for 15 minutes. Then turn the oven down to 350* and cook 10 minutes per pound or until a thermometer reads 150* - 160 * internal temperature. Remove from pan and remove all salt and pepper. Let meat rest. It will continue to cook.
Then slice the loin into thin slices and place in a Dutch oven. Cover with BBQ sauce and enough grapefruit juice to thin out the sauce. Place in a low oven to keep warm. Serve with hamburger rolls.

Fr. Paul’s Lazy Lasagna
3 pkgs. pre made raviolis, do not boil
2 jars tomato sauce
2 – 3 links turkey Italian sausage, cooked and sliced
6 – 8 slices of Provolone cheese
¼ cup mozzarella cheese, shredded

In a baking dish, layer pre made uncooked raviolis. Cover with a layer of cooked sausage. Spread one jar of sauce on top. Layer more raviolis and cover with the second jar of sauce. Top with cheese. Cover and bake at 350* for 45 – 60 minutes.
