Kate’s Squash and Tomatoes
3 - 4 flying saucer squash (or any kind that are in the garden), sliced thin
3 – 4 cloves of garlic, chopped
2 Tbsp. olive oil
1 handful of fresh chives, chopped
3 – 4 tomatoes, chopped
Salt and pepper to taste

In a large frying pan heat oil.  Add the garlic and cook about 2 minutes, being careful not to burn the garlic – add more oil if needed. Then add the squash and cook until translucent about 3 – 5 minutes.  Add the chives and tomatoes and cook another 3 – 5 minutes until the squash is cooked.

Kate’s Swiss chard and Collard Greens
A big handful of chard and a big handful of greens
3 Tbsp. olive oil
Salt and pepper to taste

Wash the greens very well, they can be sandy.  Then remove the tough stems and slice into ½ strips. Don’t be concerned about drying the greens. The extra water will help them stem in the pan.In a large pan heat oil and add the collard greens first – they take longer to cook.  Cook about 5 minutes then add the chard.  Cook about 4 -6 minutes longer or until the greens are tender and wilted.  Add salt and pepper to taste.

Kate’s Tilapia
4 tilapia fillets
Salt and pepper to taste
2 tsp. fresh thyme, taken off the stem
Flour for dredging
2 Tbsp. olive oil

Dredge the fillets in flour and sprinkle with Salt and pepper. Place in a frying pan with oil and cook fish 10 minutes per half inch of fish.
