Knights of Columbus - Sweet and Sour Cabbage
1 cabbage - chopped
1/2 pound of bacon - cooked and chopped up
All of the bacon fat, rendered from the bacon
1 apple, peeled and sliced
1 onion, sliced thin
2 cups of apple cider
1 cup of apple cider vinegar
1 cup of brown sugar
Salt and pepper to taste

Prepare the bacon ahead of time. Cook bacon until crispy and reserve all the fat. Cool bacon and chop, and set aside. With the bacon fat in the pan, and the heat on medium, add the onion slices to the hot bacon fat cook for 2-3 minutes. Then add the apple slices and allow them to cook for about 3 minutes until there is a fragrant apple scent. Add the cabbage before pouring in both the apple cider and apple cider vinegar. Then, add the brown sugar. Mix well. At this point you may need to add a cup or so of water. The cabbage should be covered with liquid. Bring the cabbage to a boil and lower the heat to medium/low and cook for 1 ½ hours. After the cabbage has cooked down, add in the bacon as a finishing touch.

Ladies of Charity - Shrimp and Basil Appetizer
1 baguette - sliced at least 1/2 inch thick
½ jar  Basil Pesto
24 pieces of cooked shrimp - small to medium sized
½ cup Parmesan cheese - shredded or shaved
4 tablespoons of light mayonnaise

Preheat the oven to 375°. In a bowl add the shrimp and pesto, mix well. Marinate it at least 2 minute but it can stay in the refrigerator overnight for a stronger flavor. In another bowl, mix together the cheese and mayonnaise. Spread the cheese and mayonnaise mixture onto the slices of baguette, top bread with one shrimp. Set the bread on a cookie sheet and place in the oven for 10-12 minutes.

Knights of St. John -Apple and Pear Tartlet
2 sheets of puff pastry - cut in half
2 apples – peeled and thinly sliced
2 pears – peeled and thinly sliced
½ cup of sugar
2 tsp. cinnamon
½ cup almonds
½ cup pecans
½ cup raisins
½ cup blueberries
2 Tbsp. mascarpone cheese

Preheat the oven to 410°. Arrange the apple and pear slices neatly onto the pastry dough. Sprinkle the cinnamon and sugar onto the fruit slices before adding almonds, pecans, raisins and blueberries. Then place the pastry dough onto a cookie sheet and leave it in the oven for 15-20 min. Upon completion, add mascarpone cheese for a punch of flavor.
