Paprikas - Chicken, beef, or pork

Sautee a medium size onion in two tbsp of oil. Add a tomato peeled and cut fine, and a green pepper also cut fine. Add 2 lbs of meat, 2 tbs of salt, 2 tbs paprika, ½ tsp caraway seeds, and about 2 cups of water and cook it slowly. (You can add more water later if needed). For beef paprikas, before you add water, you can add ½ cup of red wine. This helps to make the beef tender. You can also add ½ tsp of black pepper.

This is the base for all the following dishes.

Chicken Paprikas

Do the above, and cook the chicken for 35-40 minutes depending on the size of pieces you use. When the chicken is done, take out the pieces from the sauce and thicken the sauce with 2 tbsp of flower that you mixed in with sour cream. Let it boil and put back the chicken pieces into the sauce for 2 minutes. Then take it off from the stove. You can serve the chicken paprikas with dumplings.


Mix 2 cups of flour, 1 egg, ½ cup of water, 1 tsp of salt. Boil water with a tsp of salt in it. If you do not have a dumpling maker, just place the mixture on a cutting board or on a plate and with a tiny teaspoon or with a knife cut it into the boiling water. When the dumplings come up to the surface, they are done. Rinse them well and keep it warm. You can mix the dumplings with a tsp of oil, so they do not stick together.

Beef Paprikas

It is good to serve over rice, but you also can serve it with dumplings. Flour and sour cream is not needed at the end because it is thick enough as it is.

Hungarian Gulyas Soup

From beef paprikas, you can make Hungarian Gulyas Soup. Cook the meat as written above until it is almost ready, approx. 35-40 minutes. (The stew beef should be cut into small cubes always.) Adding 2 carrots, 2 parsley roots cut small, one slice of celery root (or one stalk of celery cut small), cook for ten minutes then add more water and 3 potatoes peeled and cut small cubes. You might need to add salt if it is necessary, or if you like spicy food, add a piece of hot paprika. When the soup is done, you can make small dumplings and add to the boiling soup. You can make the dumplings from 1 egg, ½ cup of flour, pinch of salt and 1/4 cup of water.

Beef with wax beens

You can use the ready beef paprikas and add one package of frozen wax beans. Cook it for ten minutes, and add a ½ cup of sour cream. Serve it with fresh bread. This is a complete meal.

Pork paprikas

You can serve the pork paprikas with cooked potato, or parsley potato. (This way you cut the pork loin into small cubes before cooking.) You can also use sliced pork with the same recipe. Make mashed potato to go with it and you can add a 1/4 cup of sour cream to the pork for a different taste.

Szekely Kaposzta

You can use the almost cooked pork paprikas and add a package of well washed and drained sauerkraut and cook it for ½ hr. Add sour cream at the end and you have a complete different meal.


3 eggs, 1/1/4 cup of flour, 1 cup of milk, 1 teaspoon sugar, pinch of salt, 1 cup soda-water, oil.

Beat eggs, flour, sugar, salt together thoroughly to make a smooth pancake batter. Set aside to rest for an hour. Just before cooking, beat in the soda water. Heat the pan. When quite hot, spoon or brush in some oil, ladle in some of the batter and gently shake the pan so that it does not stick. When the batter begins to form small bubbles, carefully turn over with a knife or spatula and cook for a few more seconds. Remove and set it aside.

Crepes could be filled with cocoa, cinnamon sugar, apricot or any other jam, walnut-sugar mix, and farmers’ cheese.

Cheese filling

9 oz farmers’ cheese (Bison, of Friendship), 2 eggs, ½ cup of sugar, grated lemon peel and a couple drops of lemon, 2 oz raisins, a package of vanilla sugar, or vanilla extract.

Mix the cheese with the egg yolk vanilla sugar, sugar, raisins, lemon. Beet of the egg white and add it to the cheese mixture. You can stuff one or two tbsp of this mixture into the crepes.

Serve it warm.

Crepes Appetizer

If you make the crepes without sugar, you can use left any kind of left over paprikas, cut or blended real fine, mixed with its own sauce and a little bit of sour cream. Put it on a oven safe pan. Spread it with the left over sauce and warm it up.

It is and excellent appetizer before dinner, or could be used as a separate meal as well.
